Corn Dressing
Looking for a dressing that’s creamy, fresh, and just a little bit different? This corn dressing might become your new go-to. I first saw it on Annie Stark’s show, where she blended fresh corn with olive oil, and it was such a simple, genius combo I had to try it. Since then, I’ve added a few flavor boosters that take it to the next level.
It’s perfect for drizzling over salads, tacos, roasted veggies, or even used as a dip with veggies or chips. If you’re looking to mix up your usual vinaigrette routine, this one’s worth bookmarking.
📋 Ingredients
- 1½ cups fresh corn (or 2 to 4 ears, cut off the cob; raw or grilled)
- 2 tbsp olive oil
- 1 garlic clove
- 1 to 2 tsp creamy jalapeño seasoning (or blend a few crispy jalapeños)
- 1 tsp onion sugar (see below)
- Salt to taste

Option 1: The Full “Corn Milk” Method
- After removing the corn kernels, scrape the cobs over a large bowl to extract the remaining juices.
- Add the corn kernels and corn juice to a blender or food processor and blend for 2 to 3 minutes until smooth. If you have a juicer and want it extra smooth without straining, you can run the corn and juices through your juicer instead.
- Pour the mixture through a fine mesh strainer and press to extract as much liquid as possible. Discard solids or compost them.
- Pour the corn milk back into the blender. Add olive oil slowly while blending on high until creamy and emulsified.
- Add garlic, creamy jalapeño seasoning, onion sugar, and salt. Blend again to combine.
- Chill until ready to use, or serve immediately over anything that needs a fresh flavor kick.
Option 2: The Quick Blend Method
- Add corn, olive oil, garlic, jalapeño seasoning, onion sugar, and salt directly to a blender.
- Blend until creamy (leave it a little textured or strain for smoothness).
- Taste and adjust seasoning or acidity. Chill and serve.
🌽 How to Make Onion Sugar
Blend 2 parts sugar with 1 part crispy fried onions (like French’s).
Store in a jar. It just gets better with time.
