Ranch Chicken & Potatoes

This slow cooker ranch chicken and potatoes is easy to prep, flexible to cook, and honestly? Even better as leftovers.

I seasoned the chicken and potatoes in the bag, made the sauce ahead, and let the slow cooker do the rest.

Topped it with cheese, bacon bits, and green onions for the kind of no-stress meal we actually looked forward to.

🧂 Quick Recipe:

  • 2 lbs chicken thighs (goes in last so it’s on bottom)
  • 1.5 lbs baby potatoes (goes in first so it comes out on top)
  • 1 tbsp ranch seasoning or a mix of dill, parsley, garlic/onion powder
  • ½ tsp salt + ¼ tsp pepper

Ranch Sauce (mix separately):

  • ¾ to 1 cup cottage cheese
  • ½ cup Greek yogurt
  • Optional: extra ranch mix or seasoning. It needs some flavor and this is an easy way to add some and change it up (I added some dill)

To Cook (Not Frozen):

  • Low for 3 to 4 hours (that’s what I did!)
  • Add sauce for the last 30 mins
  • Finish with shredded cheese, bacon bits, green onions, or whatever you like

Want to freeze it?

  • Store sauce separately for best texture
  • Cook from frozen: 6 to 7 hrs on low / 4 hrs high
  • Add ¼ cup broth if sauce is separate
