Macro Friendly Cheesecake
Cheesecake that fits your day. This one is no bake, packed with protein, and made with sugar free pudding. Blend it, jar it, chill it, and you have little cheesecakes waiting in the fridge whenever the craving hits. The batch makes 4 servings, but I split it into 5 jars so my work week is covered.
When I am watching my macros and need more protein, I would rather eat it than drink it. And I always love dessert. This recipe covers both.
It is creamy, it is simple, and it is one of my favorite things to keep on hand. The white chocolate pudding is my go to because it is super neutral, so every topping works with it. In the video I made the lemon version, and it is so fresh and bright.
Blender tip: use room temperature cream cheese unless you have a heavy duty blender. This mix is thick, and cold cream cheese can stall a regular blender.
🥄 Try it first: 1 serving
Want to taste it before you make a full batch? This is about a quarter of the batch, one serving.
- 2 oz cream cheese, room temperature
- 1/4 cup (60 g) vanilla Greek yogurt
- 1 scoop vanilla protein powder
- 3 oz unsweetened almond milk
- 1 heaping Tbsp (about 10 g) sugar free instant pudding mix
- 1 Tbsp oats (optional)
- A splash of vanilla extract or paste, or lemon juice or extract (optional)
Blend until smooth, pour into a jar, and chill at least 2 hours. A small blender cup works great for one serving, and softened cream cheese makes it much easier.
🍓 Make it your way
- Flavors: switch up the extract and the sugar free pudding flavor. Vanilla, cheesecake and white chocolate all work.
- Lemon (like my video): use sugar free lemon pudding and the juice of 1 lemon. Top it with blueberries.
- Lower carb: use full fat cream cheese and a full fat Greek yogurt with no added sugar. Swap the oats for 2 Tbsp oat bran, or leave them out completely. Without the oats it sets up more like a mousse.
- No protein powder? Skip the powder and the almond milk and start with 9 oz of a ready to drink vanilla protein shake. Blend it, then add up to 1 Tbsp more pudding mix only if it needs thickening. Shakes vary in thickness, so adjust the shake and pudding until it is as thick as you like. For one serving, start with about 3 oz of shake.
Heads up on the shake swap: 4 scoops of protein powder is about 96 g of protein. A ready to drink shake is usually 26 to 30 g. That takes each jar from about 33 g of protein down to about 19 g. Still creamy, still dessert, just count it as the lighter protein version.
Want the convenience and the protein? Use the shake plus 2 scoops of powder, or pick a high protein shake like Core Power Elite. Either way you land back around 30 g a jar.
🍒 Topping ideas
- Fruit: any fruit you love. Strawberries go with every flavor, blueberries are great with lemon, and plums or peaches are so good with white chocolate.
- Sugar free pie filling: cherry or apple turns it into a whole dessert.
- Ice cream toppings: any sugar free topping you would put on ice cream or cheesecake.
- Cookies: crumble a sugar free cookie on top for a little crunch.
- Peanut butter: a swirl is amazing with white chocolate or vanilla. American Dream Nut Butter is my favorite, and melted stevia sweetened chocolate chips on top of that is a win.
📊 Macros per jar (about)
| Version | Calories | Protein | Carbs | Fat |
|---|---|---|---|---|
| As written, light dairy with oats | 225 | 33 g | 17 g | 2 g |
| Full fat dairy, no oats | 340 | 28 g | 14 g | 20 g |
| Ready to drink shake instead of powder | 165 | 19 g | 18 g | 3 g |
These are estimates from typical labels for one jar when the batch is split into 5, before toppings. If you split it into 4 servings, each one is a little bigger. Your brands may vary, so check your own labels if you track closely. Most of the carbs come from the pudding mix.
